We planted this new fungus-resistant red wine variety—cultivated by Valentin Blattner—in 2021. On our Jura limestone soils, Cabertin matures into spicy, dark-colored grapes. Traditionally fermented on the skins and aged in wooden barrels, it develops into an intensely fruity, dark-colored red wine reminiscent of Cabernet Sauvignon. It is characterized by a velvety tannin structure, pleasant acidity, and great elegance.
